Sun Dried Tomato Pesto Chicken

Intro

Sun Dried Pesto Stuffed Chicken is something I made up after seeing another Stuffed chicken recipe.  I also came across this sun-dried pesto and thought it would be just the right flavor for this relatively quick air fryer recipe.  Cheese, Pepperoni, and bacon just seemed like the following logical additions.  I was right and I’m happy to share this with you.  Make sure you put the pepperoni in first.  My pictures don’t reflect this, but hey we all make mistakes.  Give this one a go!

Ingredients

  • 3 Large Chicken Breast
  • 1.5oz Sun Dried Tomato Pesto
  • 6oz Mozzarella
  • 6 Large Slices of Pepperoni
  • Cajun Seasoning
  • Bacon Bits
  • Parmesan Cheese

Directions

  1. Cut each chicken breast about ¾ of the way thru, so you have an area to stuff the chicken.
  2. Place the 2 Slices of Pepperoni into each of the chicken breasts.
  3. Layer the Sun-dried tomato pesto over the pepperoni.
  4. Place 2oz of Mozzarella into each of the chicken breasts.
  5. Close the chicken over the stuffing and then put each into the air fryer basket.
  6. Season the chicken with the Cajun seasoning.
  7. Place the chicken into the air fryer and let it cook for 17 minutes at 400F.
  8. Remove from the air fryer and sprinkle the bacon and some parmesan cheese onto each of the chicken breasts.
  9. Broil for 1 to 2 minutes in the oven and then remove.
  10. Plate and enjoy with a side dish!
