Yields 8 Taquitos
Intro
Air Fryer Taquitos is a great filling meal that is easy to create. I like this recipe because you can make a bowl of the filling and then store it in your fridge until you want to make them. I’ll make a batch of the filling and air fry a few right off the bat to enjoy my creation, but then place the rest of the filling and keep it in the fridge to eat over the next couple of days. The fill just keeps well refrigerated. The other thing I really like about these Air Fryer Taquitos is the crisp that the Air Fryer puts on the tortilla! The Air Fryer puts a nice brown color and creates a crunch that you just don’t get in the oven.
My version of this Air Fryer Taquitos is a little different than your average Taquitos. Usually, they are smaller and the filling is simply rolled in the Tortilla with the ends open. For these I suggest using a 6-inch flour tortilla, stuff it with a lot of filling, and to roll them up like a Burrito with the ends closed. This keeps the filling contained and I think makes for a better experience overall. Plus less leakage, hence less of a mess while cooking in the Air Fryer. Ingredients
- 2 Cups of Pulled Pork or Shredded Chicken
- 8oz Cream Cheese cubed
- 8oz of Shredded Pepper Jack
- 1 Cup of Salsa
- 2 to 3 Jalapeno Peppers Diced
- 4.5 oz. Can Green Chilies
- 1 Chipotle Pepper in Adobe sauce
- 8 6 inch Four Tortillas or more
Directions
- Take your Cream Cheese out of the fridge and let it soften up.
- Now cube up the cream cheese and add it to a bowl.
- Add the Can of Green Chilies, Diced Jalapeno’s, Salsa, and 1 Chopped up Chipotle Pepper to the bowl with cream cheese.
- Now add the Shredded Pepper Jack and the Pulled pork or Shredded Chicken to the bowl.
- With everything now in the bowl you want to mix it well with a large spoon.
- Have your Air Fryer out and plugged in ready to go now.
- Heat a nonstick pan to a medium heat and place a tortilla in the pan to heat it up for 15 to 20 seconds on each side. This will make the tortilla easier to roll.
- Take the heated tortilla and in the middle place a couple spoons of the mixed filling. Roll the tortilla burrito style. Repeat this process for as many as you can fit in your air fryer.
- Now spray the air fryer basket with a cooking spray and place the Taquitos into the basket. Give the Taquitos a light spray.
- Cook the Taquitos in the Air Fryer at 375 degrees for 8 to 10 minutes. Check half way and if you need to you can flip the Taquitos to get them to cook evenly. Air Fryers are not all the same play with the temperature and timing to get your desired cook. I have found that the 375 at 8 to 10 minutes works well for this size of Taquito.
- Plate once cooked and get a good dip if you desire. I’d suggest sour cream, salsa, or even guacamole!
