Intro
Avocado bruschetta is a recipe I developed because I grew a TON of tomatoes in my garden this year and I needed to eat them ALL! Now I’ve been making Lazy Man’s Bread on the regular, so I utilized it for this Bruschetta. I baked the bread in the morning and then put this Avocado Bruschetta together that evening. However, feel free to use any type of bread you prefer. Fancy people I’m sure will use Baguette French bread or a similar Italian Bread. I really enjoyed this recipe and hope you do as well. I believe I really made some good flavor combinations here that will make you and anyone you serve it to smile.
Beer pairing
I made this recipe toward the end of summer because that is when my tomatoes were turning that perfect tomato red! I also feel that appetizers always seem to taste a little better with a beer and shared with friends. Since its summer I had a summer style beer imported from overseas. Hoegaarden is the beer I went with to pair with my Avocado Bruschetta. Now HOEgaarden is pronounced WHOgaarden. Let’s get that out of the way first. We can have a few jokes about Hoe beer and wild nights with HOE’s, but really its pronounced WHOgaarden. Plus it a wheat beer first made by Monks. I don’t think Monks were into Hoe’s, but who really knows.
Hoegaarden is a great wheat beer from Belgium that uses a refreshing flavor developed from Citrus and earthly coriander. These flavors really pair with the Avocado and tomato flavors from the Bruschetta. I found it to be wonderfully enjoyable. Spend a couple of extra bucks and get a six-pack for when you make Avocado Bruschetta!

Ingredients
- 3 Avocados
- 4 or 5 Tomatoes
- Bread (Enough to fill out a baking sheet 18-21 pieces)
- 1/2 Cup of Oil Olive or Avocado (1/4 cup for the Bread & ¼ Cup for the Tomatoes)
- ¼ Balsamic Glaze
- 1 TBS of Fresh Basil or Dried Basil
- ½ Cup of Shredded Mozzarella
- 3 Garlic Cloves Minced
- Salt & Pepper to taste
Directions
- Mince the Garlic Cloves and mix them into a ¼ Cup of Oil.
- Brush the Oil Garlic Mixture on to the bread that is spread out over a baking sheet.
- Broil the Bread 8 to 10 minutes or until lightly toasted.
- Mashup the Avocado into a bowl. Season the Avocado mash with the Basil. Also, add salt & pepper to taste.
- Dice up the tomatoes to small pieces and add them to another separate bowl from the avocado.
- Add a ¼ cup of the Oil along with a ¼ cup of the balsamic Glaze. Mix all of this together and let it sit for several minutes so that the flavors mesh together.
- Now spoon and spread the avocado onto each of the pieces of bread.
- Then spoon the tomato mixture on top of the avocado layer.
- Sprinkle the top of the tomato layer with just a pinch of the shredded Mozzarella cheese.
- Place the baking sheet with the Avocado Bruschetta back into the oven on broil for another 5 to 8 minutes.
- Once the cheese has melted to the desired level you can remove from the oven and plate.
- Crack a beer and enjoy!
