Intro
Stuffed Chicken Breast is a great recipe that is fun and simple to create. Don’t need much for this one. I did this one with minimal equipment and it really had some great flavor. What did I stuff the Chicken with you may be asking yourself? Well, I used cream cheese, spinach, & some Swiss cheese. I also wrapped the Chicken in bacon because why not?
Now you can stuff chicken breasts with all kinds of different things, but the basic process is the same, so get creative and mix it up. What is your favorite Chicken combo? I’ve really enjoyed the combination of Chicken, Bacon, & Swiss cheese. Arby’s Chicken, Bacon, Swiss Sandwich is where I first discovered this combo. Chicken, cream cheese, & hot sauce could work well for another idea to throw out there. Limitless options in the old kitchen, so make it your own. If you do something that doesn’t work then you learned and added to your cooking knowledge.
I tried a while back to make a one-skillet meal with ground chicken, bacon, & Swiss cheese. It didn’t work the chicken was too dry and the consistency was just not appealing. I learned and from that, I moved on to this recipe and it is fantastic. Go ahead try new things or just give this one a shot for now!

Ingredients
- 4 Chicken Breast
- 8oz of Cream Cheese
- 8oz of Swiss Cheese
- 1 ½ cups of chopped spinach
- 12 slices of Bacon
- 3 medium Potatoes
- Salt & Pepper
Directions
- Preheat oven to 400 degrees
- May sure you let your Cream Cheese Soften
- Chop up the spinach and set aside
- Grate the Swiss cheese.
- In a bowl mix well the Cream cheese, spinach, & Swiss cheese. Season with Salt & Pepper.
- Cut each chicken breast about ¾ of the way, so that you can open it almost like a book.
- Spoon in the mixture into each of the chicken breasts.
- Wrap each chicken breast with 3 pieces of bacon.
- Cut the potatoes into equal-sized pieces.
- Prepare a baking sheet by placing foil over it.
- Place the chicken onto the prepared bacon sheet.
- Add the potatoes around the chicken.
- Place in the oven for 40 minutes and then broil for an additional 4 to 5 minutes to crisp up the bacon. You may want to check on the chicken with an instant-read thermometer as you approach the 40-minute mark. The internal temp should get to 165 degrees.
- Remove from oven and plate for dinner or lunch!
