Intro

BBQ Mini Meat Pie is a fun appetizer that is somewhat like Sheppard’s pie on a smaller version.  This one I like to make and then reheat for meals throughout the week.  It would also make a great appetizer for a friendly get-together.  BBQ Mini Meat Pie is not a simple recipe.  It has a lot of steps and is somewhat time-consuming.  However, if you have some leftover Mash Potatoes and some pie crusts around it’s not too bad.  Give this one a go the flavors are fun and they are filling little pies!

Ingredients

  • 1 Pound of Ground Beef
  • 1 cup of BBQ Sauce
  • 4 Pie Crust
  • 16oz Mixed Frozen Vegetables
  • 2 Clove of Garlic
  • 4 Large Potatoes
  • 4 TBS Butter
  • ½ Cup to 1 Cup of Milk

Directions

  1. Dice your potatoes into small cubes and put them in a pot.
  2. Cover the Potatoes with water and bring to a boil.
  3. Reduce the heat and then let the potatoes simmer on a low boil for 12 minutes.
  4. Test the potatoes with a fork to make sure they are fork-tender.
  5. Drain the water off the potatoes return to the stove and add the butter & minced garlic.
  6. Mash the potatoes up and add a ½ cup to a cup of milk until you have mashed potatoes.
  7. Set off the heat and let cool.
  8. Spray a muffin pan with cooking spray.
  9. Use a cup to cut out a circle from your pie crusts. Use a roller to make the circles a little larger and add them to the muffin tin.
  10. Put the muffin tin into a preheated oven at 375 degrees Fahrenheit for 8 minutes.
  11. Remove from oven and set aside.
  12. In a pan over medium heat cook your ground beef.
  13. Once the Beef is browned drain off a little of the juice and then add the vegetables and BBQ sauce.
  14. Mix all the beef, vegetables, and BBQ Sauce together and heat up until the vegetables are cooked.
  15. Spoon the beef mixture into each Muffin pie and then top with a spoonful of the mashed potatoes.
  16. Broil the BBQ Meat Pies on High for 3 ½ Minutes.
  17. Remove, Plate, and Enjoy!
