Intro

BBQ Sweet Potato Skillet Pie is a healthier recipe that is great for Sunday meal prep or just a great meal to fill you up!  This is one of my personal favorites and I’m happy I get to share it with all of you!  Ground Beef or Turkey works well as the base.  While the Veggies & Black Beans help to add substance.  BBQ Sweet Potato Skillet Pie also uses Sweet Potato mash to really help fill you up.  I utilize a no sugar BBQ sauce called G Hughes Smokehouse BBQ Sauce.  It comes in three flavors and I like them all.  Any of the three will work for this recipe, but I like the Hickory flavor for this one.  BBQ Sweet Potato Skillet Pie also reheats well, so it can be used for a work lunch.  Give this one a try it!

Ingredients

  • 1 pound of Ground Beef or Turkey
  • Salt & Pepper
  • ½ Cup of BBQ Sauce
  • ¼ Cup of Dijon Mustard
  • 1 Large Diced Tomato
  • 3 Large Sweet potatoes
  • 1 TSP of Cinnamon
  • ½ Cup of Greek Yogurt
  • 16oz Bag of Frozen Mixed Vegetables
  • 15oz Can of Black Beans
  • 4oz of Shredded Cheddar Cheese

Directions

  1. Peel & Dice up the Sweet Potatoes into cubes.  Boil them in water until they are soft with a fork.
  2. Place the Sweet potatoes into a bowl and add in the Greek Yogurt and Cinnamon.
  3. Mash the three together to create the Sweet Potato Mash Topping.  Set aside for later.
  4. In Skillet, you can place in an oven brown the Ground Beef or Turkey.  Use medium-high heat.  Season the meat with Salt and Pepper to taste.
  5. Once the meat is cooked decrease the heat to a medium and add in the Diced tomato, Frozen Mixed Vegetables, and drained black beans.
  6. Mix all of this up with the meat.
  7. Add in the BBQ Sauce & the Dijon Mustard.  Mix these into the mixture.
  8. Preheat the oven to 350.
  9. Place the Sweet Potato Mash on top of the mixture then sprinkle the Shredded Cheddar over the top.
  10. Place the skillet in the oven for 15 minutes or until the cheese is melted and the mixture is bubbly.
  11. Finally remove from oven, plate, and enjoy!
