Beefy Chickpea Pasta Bake

Intro

Beefy Chickpea Pasta Bake is an easy bake that has great flavor!  I really like this one because I will make this and eat it over the course of a week.  WHY?!  First off it makes 8 servings and second it really is one of the best-reheated meals I make.  It tastes just as good reheated as it does coming right out of the oven when you make it.  A big pot and a 9×13 Pan is helpful for this one, so if you need one of these click the link to my shop.

Now if you don’t like Chickpea pasta you can substitute whole wheat pasta or that protein plus pasta that is out there.  I’ve always liked the Barilla pasta but to each their own.  The Chickpea pasta I use is the Banza.  All of these kinds of pasta work well and I’ve used myself.  Another substitute is Ground Turkey if you don’t want the Beef.  Now the marinara I used was a homemade version my family makes each year, but store-bought will work just fine!

Ingredients

  • 1 Pound of Beef
  • 14.5 oz Can of Diced Tomatoes
  • 3 Green Bell Peppers
  • ¼ TSP of Salt
  • ½ TSP of Red Pepper Flakes
  • 16oz of Cooked Pasta
  • 8oz of Shredded Mozzarella Cheese
  • 1 Quart of Spaghetti Sauce or Marinara

Directions

  1. Dice up the Green Bell Peppers into large man size bites. And then Brown the Beef in the skillet with your Peppers.
  2. Season the Meat with the Red Pepper Flakes & Salt.  You can add more if you want a spicier result…I did.
  3. Now preheat Oven to 400 degrees Fahrenheit.
  4. Next, cook the 16oz of Pasta as directed by the box.
  5. In a large pot mix together the pasta, meat mixture, can of tomatoes, & the Marinara sauce.  Mix this well over medium-low heat.  You are basically just heating up the sauce and mixing up the flavors here.
  6. Transfer the Pasta mix over to the 9×13 Pan.
  7. Cover the pasta with the Mozzarella Cheese and then place it into the oven for 20 to 25 minutes or until the cheese is melted.
  8. Remove from the oven, bowl, and enjoy!
