Intro

Blueberry Pancake Casserole is like a dessert-type breakfast.  What does that mean?  Well, it tastes more like a dessert than breakfast.  This is also just a dump and heat recipe that makes it super simple for anyone to do and makes it quick for any weekend.  Blueberry Pancake Casserole fits in a 13 by 9 pan, making plenty.  If you have the whole family around for a holiday or a weekend at home, this is a great breakfast.  If you are a fan of blueberry and of pancakes this one is defiantly for you!  Give it a go!

Ingredients

  • 2 21oz Cans Blueberry Pie Filling
  • 12 Frozen Pancakes
  • 1 Stick of Butter
  • 2 7oz Boxes of Jiffy Blueberry Mix

Directions

  1. Preheat Oven to 350 F.
  2. Spray a 13 by 9 pan with cooking spray.
  3. Place the 12 Pancakes on the bottom of the pan.
  4. Dump and spread the Blueberry Pie evenly Filling over top of the pancakes.
  5. Sprinkle one box of Jiffy blueberry mix over half of the pan.
  6. Repeat the process of sprinkling the second box over the rest of the pie filling.
  7. Now cut up a stick of butter into 12 even pieces and place them on top of the Blueberry Mix.
  8. Place in oven for 30 minutes.
  9. Remove from oven let cool for 10 minutes, cut, and then plate for eating!
