By using Jiffy blueberry muffin mix, I’ve simplified the process without sacrificing flavor. Ingredients

  • 2 Boxes of Jiffy Blueberry Muffin Mix
  • 4oz Cream Cheese
  • 1 Stick of butter
  • ½ Cup of Light Brown Sugar
  • 2 Eggs
  • 1 ½ Cups of White Chocolate Chips

Directions

  1. Ahead of making, let the cream cheese and butter soften.
  2. In a large mixing bowl, mix in the Muffin Mix, Cream Cheese, Butter, Brown Sugar, & Eggs.
  3. Mix these until smooth and then fold in the White Chocolate Chips.
  4. Now cover the bowl and refrigerate for at least 1 hour.
  5. Just before removing the dough from the refrigerator, preheat the oven to 325°F.
  6. Prepare a cookie sheet lined with parchment paper.
  7. Place teaspoon-sized dough drops on the sheet at least 2 inches apart from one another.
  8. Bake for 14 to 15 minutes. Then remove and let cool on the sheet for 1 to 2 minutes before placing it on a wire rack to cool completely.
  9. Enjoy a cookie with a glass of milk or just as it is.
