Broccoli Slaw Egg Bake

Intro

This recipe came to me very quickly after I say a couple different healthy scramble type breakfasts and bakes.  I took what I think are the best parts and created this Broccoli Slaw Egg Bake!  I added some mushrooms and decided to add breakfast meat.  In this instance I used bacon, but a nice breakfast sausage would also work well with this one.  I also made this in a cast-iron skillet, so that I could cut them into pie-shaped servings.  However, you could easily use a 9 by 13 pan both of these you can get through my shop!  The main inspiration for this recipe is from a CrossFit athlete named Cole Sager and his Sager Scramble.  You can check it out here on YouTube.

The reason I changed it up, made it a bake, and I’m sharing with all of you is because it tastes awesome.  Also by making it a bake I can make it on the weekend, cut it into servings, and heat them up over the week for a quick morning breakfast.  The other reason I like this one is that it is packed with veggies and that makes Broccoli Slaw Egg Bake a great recipe.  Give it a go!

Ingredients

  • 8 Eggs (you can sub in egg whites as well)
  • 12oz of Broccoli Slaw
  • 1 Large Sweet Potato
  • 6 Slices of Bacon or 4-6oz of Breakfast Sausage
  • 1 Pint of Mushrooms
  • 2 TBS of Butter
  • Garlic Salt
  • Pepper

Directions

  1. Cut up your bacon or crumble up your breakfast sausage and cook it in a pan over medium heat.
  2. Removed the cooked meat and let it drain and cool on a paper towel.
  3. In a skillet sauté the mushrooms in butter until cooked over medium heat.  Seasoned with garlic salt to taste.
  4. Turn heat off of the mushrooms.
  5. Utilize a grater to break down the large sweet potato, not a hash.
  6. Now if you want to take out a 9 by 13 pan and use it instead of a Cast Iron Skillet.  I just used a skillet.
  7. Add the Broccoli Slaw and the Grated Sweet potato to the Mushrooms. Mix it all together in the Skillet.
  8. Now in a bowl add the 8 eggs.  In this instance, I used 6 eggs and then added 2 more worth of egg whites.  I beat the eggs with a fork and put in some Pepper.
  9. Preheat the oven to 350 degrees Fahrenheit.
  10. Pour the Eggs over the rest of the ingredients in the Skillet or 9 by 13 pan.
  11. Bake this in the oven for 20 to 25 minutes or until the Eggs set up.
  12. Once done remove from the oven and slice into 8 equally sized pieces and serve on a plate.  Enjoy!
