Intro
Budget Friendly Potato Soup came to me on a cold fall/winter night. This one is a simple recipe for fighting inflation and cold weather. Is it the best Potato soup you will ever have? Well No! However, you get a budget-friendly fast soup that is enjoyable. Use the O’Brien Hash browns, so you get the flavor of the onions and peppers. I’ve included a couple of topping ingredients, but you can skip those to keep costs down. You could also double this recipe and put it in a slow cooker after you make it to eat over a couple of days. This recipe is under $10 for sure. I find Potato soup quite comforting and great on a cold day. Give this simple one a go! If you don’t like it you are only out the $10 and some time to cook it.

Ingredients
- 1 Packet of Country Gray
- 28oz of Frozen O’Brien Hash Browns
- 2 Cubes of Bouillon
- 4 cups of Water
- Cheddar Cheeses (Optional Topping)
- Sour Cream (Optional Topping)
- Bacon Crumble (Optional Topping)
Directions
- Put a pot on medium-high heat on the stove.
- Put in your Hash Browns, country gravy, and cubes of bouillon.
- Pour the water over the top of everything and mix as best you can.
- Bring to a boil and then reduce the heat to a simmer.
- Stir as needed!
- Simmer for 10 to 15 minutes. Or until it gets to your desired thickness for soup and the potatoes are cooked to your liking.
- Bowl, top, and serve on a cold fall or winter day.
