Buffalo Chicken Meatballs

Yields about 2 dozen meatballs

Well, we have a great one here my friends!  This is a pretty diverse recipe.  Chicken meatballs are a good source of protein and can be used as an appetizer or can be added to dishes like pasta.  I also enjoy adding it to my lunch bag when I know I need some extra food to fill me up mid-day and get me ready for my after-work gym activity.  In this instance, I made this as a Football Appetizer!  Big game coming up this weekend.  Just cook them up then put them in a slow cooker to keep them warm throughout the game.  Plate, drizzle on some BBQ sauce, hot sauce, or even ranch dressing!  Go Crazy and mix some of those up!  Added note here these freeze well for later use!!!

Beer pairing

For Chicken, in general, I’d recommend a light German lager or a Belgian Saison.  Now Hefeweizen aka a Wheat beer would also pair well with these Buffalo Chicken Meatballs.  We don’t want a hopped-up beer for this one.  These beers will not overpower the meatball.  Trust me on this one back off the hops and enjoy the flavor of the meatball!

Ingredients

  • 2lbs of Ground Chicken (If your store doesn’t carry this you can do what I did and took the chicken breast and created my own in the food processor)
  • 2/3 Cup of Hot Sauce
  • 1 ½ Cups of Bread Crumbs
  • 1 large egg
  • 1 ½ Cups of Celery (Two Options you can dice these up small or add them to the food processor)

Optional dips/ingredients

  • Jalapeno peppers (can be added in with Celery)
  • Ranch Dressing (Topping)
  • BBQ Sauce (Topping)
  • Hot Sauce (Topping)

Directions

  1. Add the ground chicken to a large bowl.
  2. Add in Celery, Bread Crumbs, Egg, and Hot sauce
  3. Mix all of these ingredients with a large spoon or whisk…spoon seems to work a little better, but do what you like.  It’s your world guys!
  4. Preheat oven to 425 degrees
  5. Prep a cooking sheet by putting down some nonstick aluminum foil and spraying it then with your choice of cooking sprays.
  6. I know your hands are clean MEN, but go ahead and give them a wash you know you like to play in the dirt. (If you don’t I can’t say the nutrition details that follow are going to be accurate)
  7. Create about an inch size Meatball and place 12 of them on the pan evenly apart.  I used a large cooking sheet lined with aluminum foil.
  8. Place in oven and cook for 25 minutes.  Keep an eye on them and around the 22-minute mark switch the oven to broil.  Repeat this process with 2nd pan of 12 meatballs.
