Intro

Butternut Squash & Sausage is a one-sheet pan recipe that can work as a meal or as a side dish.  No major skills required for this one.  Just be handy with a knife.  How are your blade skills?  Need to learn some basic 101 Kitchen Knife skills.  I got you covered hit up this link and turn up the volume the music is marvelous.  Knife Skills are important for 2 reasons for Cooking.  One there is a lot of cutting in cooking and 2 you really don’t want to cut yourself!

I use this recipe to get some vegetables in my diet.  I’ll rotate around different types of sausage and peppers to keep from getting boring.  What I love about this is how easy it is, but also the aroma it puts off while it cooks!  I have another recipe that I’ll release later that is very similar, but different.  Stay tuned!

Ingredients

  • 1 medium butternut squash
  • 6 small multi-colored sweet peppers
  • 1 large green pepper
  • 12oz Smoked Turkey Sausage rope link
  • 4-5 TBS of Olive Oil
  • 2 TBS Dried Thyme
  • 1 TBS Dried Rosemary
  • 1 tsp Salt
  • ½ tsp pepper

Directions

  1. Preheat the oven to 400 degrees
  2. Cut up the Butternut Squash, Sweet peppers, Green Pepper, & the Smoked Turkey Sausage.
  3. Line a cooking sheet with nonstick aluminum foil.
  4. Place all of the cut-up items on the cooking sheet.
  5. Coat everything with the olive oil.
  6. Sprinkle on the seasoning and give it a good mix around the sheet pan.
  7. Place pan in the oven and cook for 40 to 50 minutes.  About halfway take out and mix up again then finish cooking.
  8. Take out of the oven and plate or bowl and enjoy!
