Intro
Carnivore Chicken Nuggets is another recipe I put together on this early 2023 health kick that I’m on. I’ve been eating mostly steaks and ground beef, so this was a nice substitute. Simple recipe here just a few ingredients and you could cook these in an oven and not an air fryer. If you need a good pork rind try these PORQ. These snacks are good and you don’t have to crush the pork rinds up. I used some raw honey as my dipping sauce, but I think a zero-sugar BBQ sauce would be fine as well. The nuggets save well and reheat just fine. Give this one a go!

Ingredients
- 1lb of Ground Chicken
- 1 Cup of Crushed Pork Rind
- 1 Large Egg
- 1TBS of Seasoning (I use Cajun, but just salt & pepper would work)
- Cooking spray (I use avocado spray)
Directions
- Take the Ground Chicken and season it with the seasoning.
- Form them into 8 Nuggets and then place them in the freezer for 10 minutes.
- While the nuggets are in the freezer crack the egg into a small bowl and beat it.
- In another bowl place the crushed pork rinds.
- Preheat the air fryer to 400 F.
- Now take the nuggets out of the freezer and dose each one in egg and then the pork rinds.
- Place each in the air fryer basket.
- Cook in the air fryer for 16 minutes, but halfway thru flip them over.
- Remove from the air fryer, plate, and dip in your favorite dipping sauce.
