Intro

Carnivore Scotch Eggs are a variation of the Scotch Eggs or as my family used to call them Hunter’s Eggs.  Back in the day, my Mom would make a version of this for my Dad to take with him when he was hunting here in Pennsylvania. I’ve always liked them, so I figured a healthy version would be fun for my animal-based diet.  So I made these with Pork crumble and air-fried them as opposed to deep frying them.  They are just as awesome, so give Carnivore Scotch Eggs a go for your morning breakfasts!

Ingredients

  • 6 Eggs
  • 3 Cups of Pork Rind Crumble
  • 1.5 Pounds of Sausage
  • Avocado Spray

Directions

  1. Boil a pot of water and add in 4 of the eggs without cracking them.
  2. Let them stay in the boiling water for 10 minutes then remove and add them to an ice bowl for another 10 minutes.
  3. After that gently peel each of the 4 eggs.
  4. In one bowl break and beat the last 2 eggs and in another bowl add the pork crumbles.
  5. Now wrap each of the 4 hard-boiled eggs in sausage.
  6. Roll the sausage eggs in the pork crumble then the egg and finally back in the pork crumble a second time.
  7. Set each now pork-crumbled-covered egg on the air fryer basket.
  8. Spray each egg with the Avocado Spray. This will help to give the pork crumble a crunch when in the air fryer.
  9. Cook in the air fryer at 400 F for 8 minutes. Then flip and cook for another 8 minutes.
  10. Plate and serve with some mustard or no-sugar BBQ sauce.
