Intro

Cheesy Pickle Bacon Bites are the perfect easy grilling appetizer for your next cookout.  These little things pack flavor and have 2 favorites!  Bacon is loved by all those who have had it and the pickle is a real taste bud tickler.  Cheesy Pickle Bacon Bites are super easy to make and when you dip them in some Ranch well you have the perfect appetizer.  These little Cheesy Pickle Bacon Bites are just a fun addition to your grilling skills that fit well with a Burger and Hot dog summer grilling session!  Please give them a go!

Ingredients

  • 4oz to 6oz of Shredded Cheddar Cheese (I use both White & Regular)
  • 18 Hamburger Pickle Slices
  • 2 Pieces of thick-cut bacon
  • 1 tsp Seasoning

Directions

  1. Fire up the grill and let it heat up.
  2. While the grill heats go and spray your 6 cup muffin pan with cooking spray.
  3. Place some of the cheese in the bottom of each of the cups.
  4. Now slice the bacon into 6 pieces and place them on the first layer of cheese.
  5. Now add 3 pickles to each cup on top of the bacon.
  6. Cover the pickles with the remaining cheese.
  7. Season all of the cups with the seasoning of your choice. I used a Cajun season, but any of your favorite seasonings will work.
  8. Place the Muffin pan on the grill over the indirect heat and cover the grill.
  9. Let this cook for about 5-6 minutes. Then uncover the grill and place it over the direct heat for a minute or two.  This will firm up the cheese on the bottom.
  10. Remove from the grill and let cool anywhere from 5 to 7 minutes. Remove from the muffin pan with a spoon and plate.
  11. Enjoy with your favorite dipping sauce.
