Chocolate Chip Pumpkin Bars

Intro

Chocolate Chip Pumpkin Bars are appropriate for the fall season and maybe even into the first week of December then they should not be made again until mid-September.  They should also be shared.  A friend message me about another meal I had posted about and I had already consumer that meal, but I did have Chocolate Chip Pumpkin Bars cooling in my kitchen.  Now, this was the first time I had made these, so I was a little nervous to share with anyone until I had tried it.  I threw cause to the wind in this instance and decided to let them stop by and try one of them.  It turned out fine.

Well because I enjoyed them and with the reassurance from a friend I shared them with some of my Fitness Family at my CrossFit Box.  More approval came and hence this recipe is posted on the interweb for all of you to enjoy as well.

I of course tested them with a scoop of ice cream for myself and made another batch.  The second batch I made with White Chocolate Chips as it was requested by one of the friends I shared with.  I have to say that all resulted in a good quality Pumpkin Bar.  Now, remember this is a FALL Recipe for FALL enjoyment!

Ingredients

  • 2 cups of Flour
  • 3 Tsp of Pumpkin Spice
  • 1 Tsp baking soda
  • ¾ Tsp of Salt
  • 1 cup of Butter (Softened)
  • ½ Cup of Brown Sugar
  • ¾ cup of Sugar
  • 1 and ½ Tsp of Vanilla
  • 1 Large Egg
  • 1 Cup of Canned Pumpkin
  • 1 and ½ cups of Chocolate Chips (Also I found that white chocolate also paired well with the pumpkin)

Directions

  1. Set the butter out ahead of time and let it soften up. Otherwise, you are waiting for it to soften and that sucks. I had this issue when I went to make this.
  2. Preheat Oven to 350 degrees Fahrenheit.
  3.  In a Medium Bowl add in the flour, pumpkin spice, baking soda, & the salt.  Wisk this all together well.
  4. In another large bowl put the softened butter, brown sugar, & sugar.  Use a hand mixer to start to cream the butter with the sugars.
  5. Add the egg and the canned pumpkin into this creamed butter and utilizing the hand mixer mix this in as well.
  6. Slowly start to add the flour mixture from the medium bowl to the large bowl.
  7. Once all of the flour mixture is mixed into the large bowl utilize a spatula and begin to fold in the first up of chocolate chips to the dough.
  8. Not cut a piece of parchment paper and place it into a 13 by 9 pan.  You can stray the pan with cooking spray if you would like.
  9. Take the dough mixture and spread it over the parchment paper in the pan.  Try your best to spread it evenly over the whole pan.
  10. Take the last ½ Cup of Chocolate chip and sprinkle them over the mixture.
  11. Bake in the oven for 30 to 35 minutes.  You can use a toothpick to test it.  It should come out clean when it is done.
  12. Remove from the oven and let it cool for 40 to 60 minutes. I usually can’t hold off the full 60 minutes.
  13. Grab the ends of the paper and lift the Chocolate Chip Pumpkin Bars from the pan.
  14. Cut them into 15 bars and enjoy!
