Dark Chocolate Cheese Cake Bars

Intro

Dark Chocolate Cheese Cake Bars came about because I had to create a sweet dessert to repay a debt.  My coach at CrossFit XBA let me skip Deadlift strength before the Metcon.  I was being a baby and didn’t want to do them.  The tradeoff was I needed to make these.  Not really a bad trade because I got some myself.  Dark Chocolate Cheese Cake Bars combines 2 great things the Chocolate Chip Cookie and the Cheese Cake!  This combination was actually really good!  The hard part about this one is not eating it right out of the oven because it smells amazing.   They need to cool and then be refrigerated before being cut into bars.  Best to refrigerate overnight!  Not a difficult recipe and is made in an 8 by 8 pan, so you don’t get a large amount.

Gives these a go with a glass of milk ready!

Ingredients

  • 2 ¼ Cups of Flour
  • ½ Tsp Baking Soda
  • ½ tsp salt
  • 12 TBS Melted Butter
  • ½ Cup of Sugar
  • 1 Cup of Brown Sugar
  • 2 eggs lightly beaten
  • 2 tsp vanilla extract
  • 1 ½ Cups of Dark Chocolate Chips
  • 8oz of Cream Cheese
  • ¼ Cup of sour cream
  • 1 egg slightly beaten
  • ¼ cup of powder sugar
  • 1 tsp vanilla extract

Directions

 

  1. Combine the Flour, Baking Soda, & Salt into a bowl. Mix these together with a Wisk.  Set aside.
  2. Add the Sugar and Brown Sugar to another bowl.
  3. Melt the butter in a saucepot.
  4. Add the melted butter to the sugar bowl and mix it all together.
  5. Beat 2 eggs lightly with the vanilla extract.
  6. Add the lightly beaten eggs and vanilla to the Sugar Butter mix.
  7. Mix the eggs into the sugar mix.
  8. Begin to add the flour to the Butter & Sugar mix to create the cookie dough.
  9. Mix and add until you have incorporated all the flour and created the dough.
  10. In another bowl add in all of the Cheese Cake ingredients. Add in the cream cheese, sour cream, slightly beaten egg, vanilla extract, & powder sugar.
  11. Preheat oven to 325 Degrees Fahrenheit.
  12. Mix these with a hand mixer until you get a smooth and consistent mix.
  13. Line an 8×8 pan with parchment paper. Make sure you leave a good amount hanging out, so you can pull the bars out to cut them.
  14. The first layer in the bottom makes an even layer with half of the cookie dough.
  15. The next layer is a layer of Dark chocolate chips. Use about half of the chips.
  16. The third layer is the cheesecake layer. Cover the chips with the cheesecake as evenly as possible.
  17. The top layer is adding little balls of the dough until you use up the rest of the dough. Sprinkle the remaining chips on the top.
  18. Place in the oven for 35 minutes. It may need longer just do a test with a toothpick to see if it is done.  If it’s not put it back in for 3 to 5-minute increments.
  19. Once done remove from oven and let cool for an hour.
  20. After the hour you can put it in the refrigerator for 3 hours or overnight.
  21. Finally out of the Fridge remove from the pan, cut, and enjoy!
