Easy Bacon Potato Egg Hash

Intro

This is a go-to quick before work breakfast.  Easy bacon Potato Egg Has is a favorite of mine!  Eggs are great, but when you can combine them with the wonder of the Potato then you really have something special.  This meal always fills the stomach and gives me a smile to start the day off just right.  Now with the ingredients you can really mix and match breakfast greats.  Bacon can be replaced by sausage or how about this you could do both…Green peppers can be replaced by jalapenos.  Cajun seasoning can be replaced by just salt & pepper.  Also, the cutting up of the ingredients can be done on a Sunday and stored in the old refrigerator for quick assemble during the week.   You will get the idea as you look over the recipe!  Men are smart…

Men you can do this!

Ingredients

  • 2 Eggs
  • 1 Medium Potato
  • ½ Green Bell Pepper (Substitute with any Pepper you enjoy!)
  • 3 slices of Bacon (Substitute Sausage?!?)
  • Season to taste! (Cajun was used in this version)

Directions

  1. Prep your ingredients!  Cut up the Pepper into tiny little chunks, cut the bacon long ways and then into tiny squares, use a grater to cut up your potato.
  2. Heat up a pan on the old stove, grill, or campfire! Yep, I’ve made this in the Wild!!
  3. Once you have a pan up to medium-high heat add in your bacon and let it cook on up to your preference.  (If not crispy then well you may want to rethink your life) Add in your peppers about midway on bacon cooking.
  4. Now that your bacon is crisp and you have some lovely bacon fat in that pan add in your grated potatoes!  Great time to add seasoning…salt & pepper work great.  Mix together and flatten out the potato.
  5. Now you have it mixed and flattened outlet it cooks for around 3 minutes to get a good crispy hash going on one side.
  6. Flip after the 3 minutes and then about a minute in break it up and crack a few eggs to the pan.
  7. Now I like this one of 2 ways in this instance I brock the yolks and mixed up everything in the pan until the egg is cooked.  The other option is to not break the yolks place a lid on the pan and let the eggs cook surrounded by the incredibly quick and tasty hash.  Not breaking the yolk give you that wonderful mix of yolk and potato mix that we all enjoy!
  8. Once the eggs are cooked plate or bowl and enjoy!
