Intro

Easy Beef Stroganoff is a simple skillet meal that I came up with to use up some ground beef this past week.  It takes some simple flavors and adds in some peas for a vegetable. This gives you a simple meal that is quick and enjoyable.  I’ve been on a Featherweight level cooking kick lately and this one is definitely that level, but that doesn’t mean it’s a lackluster meal.  Easy Beef Stroganoff I believe will now be in my rotation for the next few months because of the flavors.  I enjoy this one and I hope you do as well.

Ingredients

  • 1 lb Ground Beef
  • Salt & Pepper
  • 1 TBS Worcestershire sauce
  • 1 ½ Cups of Beef Broth
  • 2 Cups of Milk
  • 2 TBS of Arrow Root
  • 6oz egg noodles
  • 16oz of Frozen Peas
  • ½ Cup of Sour Cream

Directions

  1. Warm a skillet to medium heat.
  2. Give the Skillet a spray with cooking spray and add in your ground beef.
  3. Season the beef with a little salt & pepper.
  4. Cook the Beef to a nice brown and then coat it with the Arrow Root. You could also use corn starch.
  5. Pour in the Beef Broth, Milk, and Worcestershire Sauce. Give it a good stir.
  6. Add in the Noodles and make sure they are covered in the liquid. Bring to a boil while continuing to stir as needed.
  7. Once at a boil reduce heat and cover. Let it cook for 8 minutes, but stir it occasionally!
  8. After eight minutes add in the frozen peas and give it a good mix.
  9. Cover for another 5 minutes and stir as needed.
  10. Now add in the sour cream and mix until it is dissolved into the meal.
  11. Plate or bowl and enjoy!
