Easy Quesadillas (Pork or Chicken)

Yields 3 Quesadilla

Intro

Easy quesadillas are a great recipe to make when you have leftover Pulled Pork or Shredded Chicken.  In this instance, I used my Slow Cooker Pulled Pork.  However Shredded Chicken works well with this recipe.  Use what you have!  If you don’t have Pork or Chicken guess what?  You can leave it out and have a terrific Black bean & Cheese Easy Quesadilla!  This is a very flexible recipe.  Give it a try and enjoy it!

Now with Easy Quesadilla’s, I like to have a lighter beer maybe with a lime wedge. Or the most interesting beer I know.  Dos Equis Amber the Double XX as I like to call it is my go-to Mexican style food beer.  This beer is just a well-balanced beer that complements these Easy Quesadillas perfectly.  The Double XX is flavorful, yet light and light tasting with that smooth finish you need in a beer.   I highly recommend this beer when you are out at a Mexican restaurant or at home making a MenFoodFlavor Easy Quesadilla!

Ingredients

  • 6 6in Flour Tortillas
  • 1 15.5oz Can of Black Beans
  • ¼ Cup of Water
  • ½ Bell Pepper
  • 8oz of Pepper Jack Cheese
  • 8oz of Pulled Pork or Shredded Chicken
  • Wedge of Lime
  • Salt & Pepper to taste

Directions

  1. Heat a pan to medium heat and spray with a cooking spray. Add the cut Bell Pepper to the pan.  Start to put some color on the Pepper.
  2. Once the pepper starts to get some color and soften a little squeeze the lime wedge juice into the pan with the peppers to give them some flavor.
  3. Remove the Peppers before fully cooked and set aside for later.
  4. Drain the Black Beans and add half to the heated pan.  Begin to crush up the beans and get them cooking.
  5. This will begin to make a paste as you do the crushing start to add a little water as you go.
  6. Once you have the paste formed add in the remaining Beans, but don’t crush these just mix them into the paste.  Salt and Pepper to taste.
  7. Turn heat off on the Pan with Black Beans.
  8. Grate the Pepper Jack Cheese and get your pulled pork/shredded chicken out and ready.
  9. Begin to heat a non-stick pan to medium-high heat.
  10. Now the building of the Quesadilla!  Place one Tortilla down, put a layer of the black bean on the tortilla, then a layer of Pulled Pork/Shredded Chicken, a layer of Green Peppers, now a layer of the cheese, and finally the second tortilla to top it off.
  11. Repeat Step 10 for the other Quesadilla’s.
  12. Spray the now warm non-stick pan with cooking spray and place one of the quesadillas in the pan.  Cook for about 2 minutes flip and cook another 2 minutes.  Watch and look at the tortilla to see how the color is coming, remove or flip sooner if needed.
  13. Once cooked place on a plate, cut, & and enjoy with salsa, sour cream, or even Guacamole!
