Intro

Enchilada Casserole Bake is an alternative to your traditional Enchiladas.  This one is spicy, so keep that in mind!  This takes very little prep work and is easy to make.  Enchilada Casserole Bake can be prepared in advance and then cook later when you are ready to eat.  This recipe is also very good reheated!  Leftovers are not a problem with this recipe. Give it a shot and you will not be disappointed!

Ingredients

  • 3 Sliced Jalapenos
  • 10oz Can Red Enchilada Sauce
  • 1 Cup of Salsa
  • 4oz Can of Green Diced Chiles
  • 9oz of Queso Blanco Sauce
  • 8oz of Shredded Cheddar
  • 6 Flour Tortillas
  • 1 pound of Ground Beef
  • Salt & Pepper

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Slice up 4 Fresh Jalapenos and shred up the cheddar cheese.
  3. In a pan brown up the beef and season with a little salt and pepper.
  4. Once the beef is brown add in the Salsa, Green Diced Chiles, & Red Enchilada Sauce. Mix this all together.
  5. Spray a 9 by 13 pan with cooking spray and put in 2 quartered up tortillas.
  6. Now squeeze in some of the Queso Blanco Sauce, one of the sliced Jalapenos, & Some of the Cheddar Cheese. Next put in a layer of the Beef Mixture.
  7. The next layer starts with the Tortillas and repeats the process until you use up everything. Should be about 3 layers.
  8. Place in the oven for 30 minutes.
  9. After 30 minutes it should be bubbly and all melted together.
  10. Cut into 6 squares, plate, and enjoy!
