Intro

Garden Tomato Pasta is a great recipe that came when I had a bunch of Tomatoes from my garden.  This Tomato sauce is delicious and straightforward to make.  Just a few ingredients and some seasonings.  I used 6 garlic cloves, but feel free to use more I will next time!  Garden Tomato Pasta is a fun end-of-summer meal that really is a reward for your hard work in the garden.  Hell if you don’t have a garden just grab some tomatoes at the local farmers market or the grocery store.  Give this one a go!

Ingredients

  • 14.5oz of Cooked Pasta
  • 1 Cup of Pasta Water
  • 8 Tomatoes
  • ½ Stick of Butter
  • 4-6 Minced Garlic Cloves
  • 2 TBS Oil (Olive or Avocado Oil)
  • 1 TBS Italian Seasoning
  • 1 TSP Red Pepper Flake
  • 1 Cup of Fresh Parmesan Cheese
  • 1 Cup of Shredded Mozzarella
  • Salt to Taste

Directions

  1. Cook Pasta as directed on the box. Reserve a Cup of Pasta Water. Place Pasta aside for later.
  2. In a large skillet saucepan over medium heat with a lid melt the butter with the Oil and Minced Garlic.
  3. As soon as the butter is melted add half of the pasta water and the Tomatoes.
  4. Cook over medium heat the tomatoes with the lid on checking for up to 15 minutes or until the skins of the tomatoes begin to burst.
  5. Once the tomatoes burst takes a potato masher and mash up the tomatoes.
  6. Season the mashed tomatoes with Italian seasoning and red pepper flake. Mix in well.
  7. Add in the parmesan cheese and let it melt into the tomatoes. Season with salt to taste.
  8. Add in the Pasta once the Parmesan is melted into the tomato sauce.
  9. Stir in the pasta and let it get coated with the sauce.
  10. Sprinkle in the mozzarella and let this melt into the pasta.
  11. Now you can plate and enjoy!
