Grape Tomato Shrimp Pasta

Intro

Grape Tomato Shrimp Pasta is a recipe developed due to an overabundance of Grape tomatoes from my home garden.  This is a great recipe it has amazing flavor and just the right balance of pasta & sauce.  If you don’t like shrimp you can substitute it with chicken.  This will make about four servings and is much easier to make than you may initially think.  Prep work is key for this one.  Grape Tomato Shrimp Pasta you should give a go and enjoy with a friend.

Ingredients

  • 2 cups of halved grape tomatoes
  • 2 cloves of garlic
  • 1/4 Cup of Chopped Basil
  • ½ Pound of cooked pasta
  • 2 TBS of Butter
  • 1 Cup of Heavy Cream
  • 1 Cup of shredded parmesan
  • 1 Pound of Protein (Shrimp or Chicken works)
  • 2-3 Cups of Baby spinach
  • 2 TBS of Avocado oil
  • Salt & Pepper

Directions

  1. The first step is to chop the garlic and half the grape tomatoes.  Also, chop up the basil. Then grate the parmesan and remove the shells from the shrimp.
  2. Bring a pan to medium heat and add in the avocado oil. Cook shrimp and season with salt and pepper to taste.
  3. Store the cooked shrimp in a bowl until later.
  4. In a pot cook the pasta as directed on the box and set it aside for later.
  5. In the pan add the butter and melt it down with the garlic.
  6. Add in the tomatoes and let them meld into the butter and garlic for about 4 minutes.
  7. Now add in the Heavy Cream and the Baby Spinach.
  8. Wilt down the Spinach and then add in the Basil & Parmesan. Let this all combine for about 2-3 minutes.
  9. Add the cooked pasta and stir it up into the sauce well.
  10. Finally, add in the shrimp and bring everything up to a level of heat that you would be comfortable eating.
  11. Turn the heat off, plate or bowl the Grape Tomato Shrimp Pasta and enjoy!
