Irish Sauerkraut Cheese Dip

Intro

Irish Sauerkraut Cheese Dip is a flavorful dip that is good with toasted rye bread.  Grab a 4pk of your favorite Irish Beer.  A little for your dip and the rest for you and your friend.  I’d grab some Guinness, but that’s me.  This one is a simple recipe that anyone can do.  Irish Sauerkraut Chees dip calls for bacon, but you can substitute other meats in this one.  For instance, let’s say you happen to have some leftover corned beef then I’d go ahead and use a Cup of that in this Dip.  Give this one a go!

Ingredients

  • 6  Slices of Rye
  • 1 TBS Olive Oil
  • 8oz Cream Cheese
  • 2 Garlic Cloves
  • 12oz White Cheddar
  • ½ Cup Guinness
  • 2 Strips of Bacon
  • 1 Cup of Sauerkraut

Directions

  1. Cut up your slices of rye bread into bite-size pieces.
  2. Cover a baking sheet with parchment paper and lay out your Rye bread.
  3. Brush each piece with the Olive Oil flip the pieces and repeat.
  4. Sprinkle the rye with salt.
  5. Roast in the oven for 12 minutes at 400 degrees Fahrenheit flipping them halfway.
  6. Remove from oven and let them cool.
  7. Mince your garlic cloves and add them to a medium-sized bowl.
  8. Add in your Sauerkraut, bacon, cream cheese, half the white cheddar shredded, & finally the Guinness.
  9. Mix all of this in the bowl.
  10. Spray either a cast-iron skillet or a small deep baking pan with cooking spray. Then spread the cheese mixture into the pan.
  11. Cover the spread with the remaining white cheddar.
  12. Cook in the oven at 400 degrees Fahrenheit for 20 minutes and then broil on high for another 2 minutes.
  13. Remove from the oven and serve with those rye bread chips!
