Lemon Butter Chicken Drums

Intro

Lemon Butter Chicken Drums is a fantastic summer grilling recipe that you need to do at least once this summer!  This one takes a little work, but the flavors are well worth the effort.  Grab your favorite cast iron skillet and get after this one.  Also, I’d recommend using a Charcoal grill, but propane will work as well.  Don’t have White Wine on hand you can sub in some chicken stock.  Lemon Butter Chicken Drum sticks are great to make on a Sunday hot summer afternoon with a cold beverage in hand.  Give this one a go and let me know what you think!

Ingredients

  • 8oz of Butter
  • 1 TBS Garlic Paste
  • 1 Tsp Thyme
  • 1Tsp Rosemary
  • Zest of one Lemon
  • 1 Cup of White Wine
  • 3-4 Lemons
  • 6-8 Chicken Drumsticks
  • Parsley
  • Salt & Pepper

Directions

  1. Soften the butter ahead of time to make the Lemon butter baste.
  2. Begin to prep your grill, so that it is ready to go.
  3. Place the softened butter in a bowl.
  4. Add in the Thyme, Rosemary, Garlic Paste, and the zest of one Lemon.
  5. Mix all of this up to make a seasoned lemon butter mix.
  6. Chop up some parsley about a ¼ Cup and sprinkle that into your butter mixture.
  7. Mix the parsley well into the butter.
  8. Next line the bottom of your Cast Iron Skillet with slices of Lemon.
  9. Prepare your Chicken drums by patting them dry. Then baste all of the drums with the Lemon butter.
  10. Once basted with the Lemon butter place them into the Skillet.
  11. Salt and Pepper the chicken once in the skillet and pour in the white wine.
  12. Place the Skillet onto the grill, not over the direct heat.
  13. Place the grill lid on with all the vents open.
  14. This should take about an hour to cook the chicken, but check the chicken with an instant-read thermometer every 15 minutes. Once it hits 165 Degrees Fahrenheit remove it from the grill and enjoy!
