Intro
Low Carb Italian Sausage casserole is a simple meal utilizing riced Cauliflower. This is the first time I’ve ever made a meal with Riced Cauliflower and I was pleasantly surprised! The flavor from the sausage and red bell pepper really made this a great meal. I also think this one would be a great side dish for a steak dinner. The riced Cauliflower had a very mild flavor and I didn’t really taste it. If you are looking for a good low-carb meal this is the one for you.

Ingredients
- 1 Lb. of Turkey Sausage (Italian Sausage optional substitution)
- 1 Red Bell Pepper Diced
- 1 TBS Avocado Oil
- 8oz Cream Cheese
- 1 TBS Italian Seasoning
- 1 Cup of Shredded Cheddar
- 10oz of Riced Cauliflower
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Dice up a Red Bell Pepper and then heat a skillet to medium heat.
- Add in the Oil and the Bell Pepper. Cook the Pepper for a minute to 90 seconds, so that they get some color on them.
- Add the ground Turkey Sausage to the Skillet. You could also use Italian ground sausage.
- Stir and cook the sausage until it is browned and then pour off some of the greases.
- In a large bowl put in the Riced Cauliflower. If it is frozen brake it up in the bowl with a fork or your hands.
- Once the Sausage is cooked add in cubed Cream Cheese.
- Mix the Cream Cheese in with the Sausage and peppers until it is all melted and combined.
- Now Pour the Sausage mixture into the large bowl with the Riced Cauliflower.
- Add the Italian Seasoning to the bowl.
- Mix this all together and then pour it into a greased 13 by 9 pan.
- Sprinkle the Cheddar Cheese over top of the sausage and cauliflower mixture.
- Cover the pan with aluminum foil.
- Bake in the oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes.
- Remove from the oven and plate!
