Low Carb Italian Sausage Casserole

Intro

Low Carb Italian Sausage casserole is a simple meal utilizing riced Cauliflower.  This is the first time I’ve ever made a meal with Riced Cauliflower and I was pleasantly surprised!  The flavor from the sausage and red bell pepper really made this a great meal.  I also think this one would be a great side dish for a steak dinner.  The riced Cauliflower had a very mild flavor and I didn’t really taste it.  If you are looking for a good low-carb meal this is the one for you.

Ingredients

  • 1 Lb. of Turkey Sausage (Italian Sausage optional substitution)
  • 1 Red Bell Pepper Diced
  • 1 TBS Avocado Oil
  • 8oz Cream Cheese
  • 1 TBS Italian Seasoning
  • 1 Cup of Shredded Cheddar
  • 10oz of Riced Cauliflower

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Dice up a Red Bell Pepper and then heat a skillet to medium heat.
  3. Add in the Oil and the Bell Pepper. Cook the Pepper for a minute to 90 seconds, so that they get some color on them.
  4. Add the ground Turkey Sausage to the Skillet. You could also use Italian ground sausage.
  5. Stir and cook the sausage until it is browned and then pour off some of the greases.
  6. In a large bowl put in the Riced Cauliflower. If it is frozen brake it up in the bowl with a fork or your hands.
  7. Once the Sausage is cooked add in cubed Cream Cheese.
  8. Mix the Cream Cheese in with the Sausage and peppers until it is all melted and combined.
  9. Now Pour the Sausage mixture into the large bowl with the Riced Cauliflower.
  10. Add the Italian Seasoning to the bowl.
  11. Mix this all together and then pour it into a greased 13 by 9 pan.
  12. Sprinkle the Cheddar Cheese over top of the sausage and cauliflower mixture.
  13. Cover the pan with aluminum foil.
  14. Bake in the oven for 25 minutes.
  15. Remove the foil and bake for an additional 10 minutes.
  16. Remove from the oven and plate!
