Maple BBQ Bacon Meatloaf

Intro

MEAT!!! In Loaf form!  In all of its glory!  Who doesn’t love a good Meatloaf?!?  When I was a kid my Mom would make meatloaf with a really great glaze on top and would serve it with tater tots!  I think almost every kid has a great meatloaf memory from their childhood.  She didn’t make it too often which kept it special…Thanks, Mom!  I never got burned out on it.  Which is why I still make meatloaf about once every 3 months.

Now this recipe is not my Mom’s classic recipe and to tell you the truth I’ll never make my Mom’s.  It was unique to her and I want to keep that memory in my mind throughout my life.  With that said this will not be my last meatloaf recipe, I will share it’s just the BEST one I have.  I’m leading with the best.

I mean you have everything a guy could want in this recipe.  Large amounts of ground beef & sausage.  Bacon, Maple BBQ Sauce, and did I mention BACON!  They all work together to create a flavor and taste that makes you feel good!  It will definitely fill your belly!

Beer pairing

Beer with meatloaf as a kid this was never an option. Mom would have a Bud Light sometimes in those little pony bottles.  I think I’ll go with Mom’s lead on this one!  A great American classic lager with a classic American family dish.  Make sure it’s cold to offset the heat from the meatloaf.  No fancy explanation as to why a cold American lager works here…it just works!  Go with it!  A simple meal and a simple refreshing beer!

Ingredients

  • 1 LB of Ground Beef
  • 1 LB of Pork Sausage
  • A cup of Bread Crumbs
  • 2 Large Eggs
  • 2 TBS of Seasoning (Salt and Pepper works fine, but here I used Flavor God Everything)
  • 3 Strips of Bacon Cut in Half
  • ¼ Cup of Maple BBQ Sauce

Directions

  1. Preheat Oven to 350 Degrees
  2. In a large bowl put the Ground Beer & Sausage in
  3. Dump in the Bread Crumbs and seasoning next
  4. Now add in the 2 eggs.
  5. Mix this all together with a spoon. (You can also use your hands right after you wash them…guys)
  6. Once mixed together you want to form a loaf in a loaf pan that has been sprayed with a nonstick agent.
  7. Now that the loaf is formed cut the bacon into half pieces so that you have six in total and space them out over the top of the meatloaf
  8. Baste the BBQ sauce over the bacon covering the top completely
  9. Once the oven is up to temp put the loaf in the oven for 1 hour
  10. Remove from the oven slice up and enjoy it!

  1. Did you know that you posted this recipe on what would have been your Grandpa’s 100th birthday?? He was a pretty good cook, too, although after a multitude of Michelobs his BBQ chicken got a bit crispy ~ LOL

     
    • I knew he was born in 1920 and that it was in January, but I had forgotten the date. That is kinda cool that I posted on that day! I remember his BBQ Chicken!
