Meal Prep Meat Pie

Intro

I came up with Meal Prep Meat Pie after COVID 19 hit and I wanted something to take to work for lunches.  It was a way to limit contact with people during this pandemic, but also a great way to eat healthier.  There are two versions of Meal Prep Meat Pie, but you can really mix those 2 versions up by using different types of ground meat.  Meal Prep Meat Pie’s 2 versions are one with a base of Sugar-Free BBQ Sauce and the other is a tomato sauce based Meat Pie.  Both are cooked in a Cast Iron Skillet or Oven Friendly Skillet!

The BBQ Version is a pound of meat, a cup and a half of BBQ sauce, black beans, cheese, brown rice, & the star of the show the mixed veggies.  All of this mixed into one skillet, seasoned and cooked to perfection.  Taste great right out of the oven and just as great reheated.  The Tomato Sauce version you use the same as the BBQ, but your sub the BBQ sauce for Tomato Sauce.  You also sub out the black beans for a chili bean.  This version is also great out of the oven or reheated for lunch.

Mix this up! Do you have a favorite veggie just use it instead of the Mixed?  Not looking at your sugar intake use a regular BBQ sauce.  It’s up to you!

Ingredients

  • 1 A pound of meat (Ground Beef, Chicken, Turkey, or Bison)
  • 1 ½ Cups of Sauce (Sugar-Free BBQ or Tomato Sauce)
  • 1 TBS of Seasoning (A mix of Salt & pepper will also work)
  • 14.5oz Can of Beans (Black Beans or Chili Beans)
  • 16oz Frozen Mixed Veggies
  • 4oz of Shredded Cheese (Cheddar or Mozzarella)
  • ½ Cup of Cooked Brown Rice

Directions

  1. Preheat Oven to 350 Degrees Fahrenheit.
  2. Heat an oven-ready skillet with a little oil to medium heat.  Then add the ground meat and put a good browning on it seasoning the meat with your favorite seasoning or just some salt & pepper.
  3. Once the meat is browned go ahead and turn off the heat.  Add in 1 Cup of the Sauce, drained beans, frozen veggies, & the cooked brown rice.
  4. Mix these up nice and well.  Top off with the ½ Cup of Sauce that is left. Then cover the pie with the Shredded Cheese.
  5. Once the oven is heated put the skillet into the oven for 20 minutes.
  6. Now after the 20 minutes is completed turn the oven to broil for 3 to 5 minutes.  This will brown and crisp up the cheese that is on top.
  7. Remove from the oven.  You can plate and enjoy or you can put it into containers for later meals!
