Intro

Mexican Meatloaf is a simple meatloaf recipe that is a great secondary option for Taco Tuesday.  Did you forget your taco shells?  Don’t worry you have everything else to make your Mexican Meatloaf.  Grab your meat and get to work.  In all seriousness, this recipe is quite good and stands up as one of my better Meatloaf recipes.  Plus it’s an interesting flavor with the taco seasoning and the salsa mixed right into the meat.  Give Mexican Meatloaf a try next time you forget your taco shells or you just need something to go with your Tequila! (Recommended Tequila is Teremana because we need to support THE ROCK)

Ingredients

  • 1 Pound of Ground Beef
  • ½ Cup of Crushed Tortilla Chips
  • ½ Cup of Salsa
  • 1 TBS of Taco Seasoning
  • ½ Cup of Shredded Cheddar
  • 1 Egg

Directions

  1. Preheat Oven to 350 Degrees F.
  2. In a bowl combine all of the ingredients and mix well with a spoon or you can use your hands.
  3. Spray a loaf pan with cooking spray.
  4. Form the Meat into the loaf pan and then cover the top with additional cheese.
  5. Place in oven for 30 minutes.
  6. Remove, slice, and serve!
