Pan Seared Salmon with Dill Mushroom Sauce

Intro

Pan-Seared Salmon is a great fish dinner that I am excited to make this year during the Lenten Season.  I try to eat some fish at least once a week.  Sometimes it’s a great dinner like this and other times is quick and easy lame fish sticks meal…I know not great, but I like them!  I have some creative fish stick recipes, so watch out for those in the future.

Some are afraid of Salmon because they think it is difficult to make.  Pan-Seared Salmon is amazingly easy to make!  If you just use a little seasoning and warm a pan up to a good medium-high heat than half the work is done.  A couple flips in the pan and you have a great meal.  Now this recipe includes a Dill Mushroom Sauce as an added bonus that is also very easy.  However, the fish alone without the sauce is just fantastic in flavor and in the way it fills you up.

Beer pairing

Pan-Seared Salmon works well with a Saison beer.  Why?  Well, this style whose complex character and moderate bitterness work well with Salmon because it is a fat-rich food.

You may be wondering what a Saison Beer is?  Well, a Saison beer is also known as a farmhouse ale that originated in the French-speaking Wallonia region of Belgium.  Farmers would make this beer in the offseason and then store it to drink during the hot summer months!

Ingredients

Salmon Ingredients

  • 2 Fillets of Salmon
  • 2 tsp of Chili Powder
  • 1 tsp of pepper
  • 1tsp lemon zest
  • Salt to taste

Sauce Ingredients

  • 3 Garlic Cloves minced
  • 2 tsp olive oil
  • 1 tsp of lemon zest
  • 2 Tbs of Dill
  • 1 cup of Heavy cream
  • 2 cups of diced mushrooms
  • 2 cups of Spinach
  • 1 tsp arrowroot starch
  • Salt & Pepper to taste

Directions

  1. Start with preparing the Salmon by taking the skin off the filets.
  2. I like to lightly spray the Salmon with cooking spray so that the seasoning will stick to the fish.
  3. Now season the Salmon with the chili powder, pepper, lemon zest, and a little salt.
  4. Set these aside and now get a pan out to start the Sauce.
  5. Heat a pan to medium-high and put in the olive oil and garlic.  Let them heat up in the pan.
  6. Now add the diced mushrooms and lemon zest.  Cook down the mushrooms.
  7. Once the mushrooms are cooked down add the heavy cream, dill, and the arrowroot starch.
  8. Let the heavy cream warm-up and then add the spinach.
  9. Let the spinach wilt down.  Season with salt & pepper to taste.
  10. Reduce heat to low on the sauce to keep it warm while you now move focus back to the salmon.
  11. Heat a non-stick pan to medium-high heat and then lightly spray the pan with cooking spray.
  12. Place the Salmon in the pan and sear the one side for 2 to 3 minutes.
  13. Flip the salmon over and cook for another 8 to 12 minutes flipping every once in a while until you have the salmon cooked to your desired readiness.
  14. Plate salmon, heat the sauce up a little, and then pour over the salmon and enjoy!
