Banana Pancakes

Quick Oat Banana Pancakes

Yields 4 servings (4 Pancakes)

Intro

This recipe was created when I wanted pancakes but was out of pancake mix.  I did a search and found a couple of different pancake recipes and ended up mixing up a few together to get this one.  Also, I had to take into account what I had in the pantry.  This is a healthy recipe, so no guilt having these pancakes!

Now you can make them not healthy by throwing lots of butter and maple syrup on them, but we are not going to talk about that!  Who would do that and ruin a healthy choice?!? (Pay no attention to the feature picture) You could use that abomination of sugar-free maple syrup if you want.  In searching for a sugar-free syrup I have yet to find one that is palatable.  If you find or know of one leave me a comment below!  I tend to go with no syrup or just add a small amount of honey.

Now you can also add different things to make them even better.  For instance, I usually add blueberries to mine.  What you do is add them as the first side cooks and then flip the pancake and let the other side cook.  Another option is to add dark chocolate chips to satisfy anyone with a sweet tooth out there on the interwebs.  Anyway, use your imagination other fruits can work.

In conclusion of my intro here since I starting making these pancakes, they are the only type I make here at the homestead. Now when I venture out into the real world I for sure get pancakes and enjoy the moment!  I’ll even go for pancakes that have those syrup traps built into them aka Waffles.  Important to venture out and try food in the world!  Even if it’s just a local place…you don’t have to wait till you are traveling to eat out!  Anyway, give this quick recipe a try and don’t feel guilty about it until you throw on all that butter and maple syrup or not.

Ingredients

  •  2 ripe bananas
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup of quick cook oats
  • 1 teaspoon of cinnamon

Directions

  1. Break up the bananas and add them to a bowl.
  2. Add the quick cook oats to the bowl
  3. Add the eggs to the bowl
  4. Add the vanilla extract to the bowl
  5. Add cinnamon to the bowl
  6. Now use a fork or a potato masher to mash the bananas with all of the other ingredients
  7. Mix all ingredients well in the bowl.
  8. Heat a non-stick pan to a medium heat.
  9. Add ¼ of the mixture to the pan and cook on each side for about 90 seconds.
  10. Then plate and serve.
