Intro

Salsa Chicken Thighs over Rice is a simple healthier recipe that you can make for an evening meal.  You can make this one with boneless skinless chicken thighs or with skin and bones.  Both chicken options are quite tasty.  Another great thing about this recipe is that simply changing up the Salsa will change up the flavors.  This helps to keep the recipe from getting boring!  For instance, I used a Pineapple Mango Salsa, and the sweetness of the salsa mixed well with a light beer and chicken.  Figure out what salsas you like and give them all a try with Salsa Chicken Thighs over Rice! Ingredients

  • 2 TBS Oil
  • 2 Tsp Seasoning
  • 4 Chicken Thighs
  • 1 Cup of Cooked Rice
  • 8oz of Salsa

Directions

  1. Begin to cook rice in a rice cooker.
  2. Preheat Oven to 250 degrees.
  3. Heat a cast-iron skillet to medium heat and add in the oil. In this case, I used avocado oil, but olive oil will work as well.
  4. Add chicken thighs to the skillet and season. Cover the pan. Flip after 4 minutes and season the other side.
  5. Cook for another 4 minutes and then turn off the heat.
  6. Pour a cup of salsa over the chicken and place it in the oven for 15 minutes.
  7. Plate the rice and then add the chicken on top of the rice.
  8. Spoon over some extra salsa and juices.
  9. Enjoy a refreshing beverage of your choice with this meal.
