Spinach Sweet Potato Lasagna

Intro

This is a meal prep recipe that is inspired by the incredible, amazing, & chef extraordinary Kevin from Fit Men Cook.  I highly recommend you check out his site, YouTube channel, book, app, & new spices.  I have his app and I’m a regular watcher of his YouTube Channel.  I have not tried his new spices, but I can only guess that they are as awesome as his recipes.  I’ll be trying them soon!  Maybe I’ll do a review of them for MenFoodFlavor!?!

Now Spinach Sweet Potato Lasagna is a Sunday meal prep recipe.  It will make 4 individual small aluminum foil dishes.  Four great lunches! I use an 85/15 Ground Beef for this recipe that I get from Butcher Box, but before I was a subscriber to Butcher Box I would use a ground turkey from the local grocery store that was just as delicious.  A super easy and healthy recipe that is just a great work lunch winner!

Now the Macro’s on this one are great at Calories 688 Carbs 53.2g Fat 28.6g Protein 56.9g. (Reminder this is an estimate from the My Fitness Pal app)  Packs a lot of protein and not a lot of fat.  You can skip the cheese on this one and it still takes great!

In the original recipe, the sweet potatoes were slices, but I find that grating those helps them to cook better and also makes them easier to eat with a fork.  You don’t have to fight cutting them up while eating.  This is a good one and it freezes well for later use.  Sometimes I’ll double the batch and freeze half.  Other times I’ll just make one big 9×13 pan of it.  The 4 small tins are the best way to portion out the meals correctly though.  Give it a try!

 

Beer pairing

Before I get into my Beer recommendation for this one I want to express that you should not DRINK on your Lunch Break!  This should be done on your off-hours.  Now that I’ve got past that warning.  I recommend the Superior Light Beer Michelob Ultra.  It’s about as healthy of a beer as you can find that still tastes like a beer with 4.2% ABV, 95 Calories, 2.6 Carbs, and 0.0 Fat.  Jimmy Fallon also recommends. Ultra also had an Organic version called Ultra-Pure Gold, an Ultra Infusion Pear Lime, and coming soon an Ultra Amber Max which is a full-flavored 3-grain beer with hints of blue agave & rye.  In my full-time job, I had a chance to try this and I thought it was wonderful.  There it is the only healthy beer recommendation I’ll probably have, but hopefully, you got a good laugh from Jimmy!

Men you can do this!

Ingredients

  • 1 lb of Ground Beef 85/15 or Ground Turkey
  • 2 Cups of grated Sweet Potatoes
  • 8oz of Diced Mushroom
  • 1 egg white
  • 1 1/2 cup of low-fat cottage cheese
  • ½ cup of Mozzarella
  • 15oz of Tomato Sauce
  • 2 cups of Spinach
  • 1 tbsp of Flavor God Everything (Great Healthy Spice!)
  • Salt and Pepper to Taste

Directions

  1. First, grate up the Sweet Potatoes
  2. Heat a skillet to medium-high heat and start to cook the ground meat & mushrooms.
  3. As the meat cooks add in the spices to give it flavor!
  4. Now when the meat is almost browned up add the spinach and let it wilt down.
  5. Reduce the heat down to medium or a little less and add in the tomato sauce.
  6. Once everything in the skillet is warm and is flavored the way you like it you can turn off the heat off.
  7. Preheat Oven to 375 degrees.
  8. In a bowl mix the egg whites with the cottage cheese!
  9. Now you are ready to begin layering your Lasagna in each of the 4 foil pans.
  10. Begin with some grated Sweet Potato on the bottom, then a layer of the Spinach Meat, then a layer of Cottage Cheese, and repeat.  Top the pan off with a little Mozzarella.
  11. Now cover the pans with aluminum foil and place in the oven for 45 minutes.
  12. Take out and enjoy or save for your Lunches later in the week!
