Sun-Dried Tomato Pasta Salad is a simple summer recipe that is great for a cookout. Simple recipe with great flavor that can accompany any summer grill favorite from your hot dog to your T-bone steak! Also amazing with BBQ Ribs or Chicken. Ingredients
- 1lb of Bowtie Pasta
- 8.5 oz of Julienned or diced Sun Dried Tomatoes in Oil
- 2 medium Tomatoes
- ¾ Cup of Pepperoni slices or cubes
- 12oz of Mozzarella or Provolone cubed
- 2 tsp of Red Wine Vinegar
- 6 tsp of olive oil
- 2 tsp of Salt
- ¾ ground pepper
- 1 Cup of julienned basil leaves
- 1 Cup of Grated parmesan cheese
- 1 TBS Garlic Paste
Directions
- Cook the pasta as directed on the box with a small amount of oil to keep the pasta from sticking together.
- Once cooked set the pasta aside and let it cool completely.
- While the pasta cools dice up your 2 medium tomatoes, pepperoni, & mozzarella or provolone into cubes.
- Add all of this to your completely cooled pasta in a large bowl.
- In a smaller bowl make the dressing by add in the Vinegar, oil, julienned Sun-Dried Tomatoes, Olive Oil, Salt, pepper, basil leaves, and garlic paste.
- Mix this dressing up completely and then pour over the pasta.
- Add the Grated parmesan Cheese and mix everything very well!
- Cover the large bowl and refrigerate at least 12 hours before serving.
- Remove and enjoy this with your favorite grilled meal.
