Intro

Thai Peanut Chicken Casserole is a casserole that you can do to introduce yourself to a little peanut spice.  This is a perfect example of finding an ingredient and creating a recipe around it.  I found this kick-ass Peanut sauce and created this casserole around this sauce.  Thai Peanut Chicken Casserole is great to make during the week.  This is also a great way to introduce yourself or a young one to some fun Thai flavors.  Maybe they or you will like this and down the road expanded your pallet when given the opportunity.  I really like this one and I hope you do as well!  Pick up a bottle of Peanut sauce here at my store!

Ingredients

  • 1 16oz Can of Biscuits
  • 3 Cups of Cooked Shredded Chicken
  • 1 Cup of Fresh Sliced Mushrooms
  • 11.5oz of Bangkok Peanut Sauce
  • 2 cups of Shredded Mozzarella
  • 1 Diced Red Pepper
  • ½ Cup of Shredded Carrots
  • ½ Cup of Honey Roasted Peanuts Chopped
  • 2 cups of Baby Spinach

Directions

  1. Preheat Oven to 350 degrees Fahrenheit.
  2. Spray a 9 by 13 Pan with cooking spray.
  3. Cut the biscuits into quarters and add them to the Pan.
  4. In a large bowl combine the Chicken, Mushrooms, & ¾ of the Sauce. Save a little for topping your meal.
  5. Mix these together well and then add them on top of the Biscuits.
  6. Spread ½ of the Mozzarella to the top of the chicken.
  7. Layer the Red Peppers, Carrots, & spinach on top of the cheese.
  8. Add another layer of cheese.
  9. Put in the oven for 30 minutes.
  10. Remove from oven top with the peanuts.
  11. Bowl and add on more sauce and peanuts as desired!
