Intro

This is comfort food that is a staple in my life.  I either make it once every couple of months or twice in a week.  I’m all over the place with this one.  Mac & Cheese is just always in the rotation!

It started out as the regular Boxed Mac & Cheese with tuna added in.  Still great and I still make that one every once in a while, but this version is just as easy to make.  For years this was what I would make whenever I need a quick filling meal.  Well, now I’ve moved to this T&T Mac & Cheese.

I’ve always liked Tuna noodle casserole (that should be a recipe for menfoodflavor.com) and I believe that is why I always add tuna to my mac and cheese.  Just recently I found these fire-roasted tomatoes at the old grocery store and thought man this just makes sense to add a little something to make this more of my own recipe!  The creation of T&T MAC & CHEESE!!!!

You can do this too! Find something that you like and add to it!  If it works great and if it doesn’t work then who cares you tried and that is what counts!

Beer pairing

T&T Mac & Cheese goes best with a Brown English Ale or if you find yourself in the middle of the fall season you can get yourself a Marzen beer.  Now the reason a Brown English ale works so well with Mac & Cheese is because they have a robust flavor that stands up to the creamy cheese sauce.  The nutty sweetness of the malt pairs excellent with the cheese.  The English hops cleanse the palate but are not too bitter. Brown ales work well.

Marzen Beers now also work here!  Why?  Well, the flavors of the Marzen beers malt help bring out the sweetness of the cheese.  Their crisp lager finish also balances the bitterness and take on the creamy richness well.

Both beers work great, but if it’s the fall season go with a Marzen Beer!

Ingredients

  •  1 A cup of Whole Wheat Macaroni Pasta
  • 2 TBS of Butter
  • ¼ cup of Milk (I used Nut Juice aka almond milk…what I had that day)
  • ½ Cup or so of Powder Cheddar Cheese(I know lame, but it tastes good & can also be put on buttery Popcorn)
  • 1 4oz can of tuna in water
  • 1 14.5oz can of fire-roasted tomatoes

Directions

  1. Fill a 2-quart pot with water to about 3/4th Place on stove and bring water to boil.
  2. Put the 1 cup macaroni pasta into the boiling water and turn down the heat to medium-high. Let the pasta cook for 6 to 7 minutes.
  3. Once the pasta is cooked pour the pasta and water into a strainer to get the water out of the pot. Leave the pasta in the strainer and return to the pot.
  4. Put the pot back on the stove and set the heat to medium.
  5. Melt the butter and once this is completed add the milk and the powder cheese. Mix all of this together to create the sauce.
  6. Now add the drained tuna and the fire-roasted tomatoes.
  7. Pour the Pasta over top of everything into the pot.
  8. Mix everything in the pot and heat the contents until it comes to a slight boil.
  9. Finally, turn off heat place in a bowl for eating.
  10. I tend to add in some of my favorite hot sauce to the bowl, but this is totally up to the individual eating.
