Veggie Fritters

Yields 6-8 Fritters

Intro

Veggie Fritters is a great and easy way to get some of those Veggies in your diet!  I’ve been trying to find ways to trick myself into eating more veggies because you know they are good for you!  I’m a sucker for those Bird’s eye Broccoli Tots and these Veggie Fritters are just as good if not better!  Plus you can change up the Veggies for Variety!  Frozen Mixed Vegetables are my go-to for this, but you cut up or shred fresh vegetables if you have the time!  This recipe calls for ½ cup of Flour, but you can sub that out for other flours and even Quick Oats in a pinch.  This makes about 6 to 8 fritters, so you can eat them all or save a few in the freezer and heat them up for later.  Simple Veggie Fritters are great, so give them a shot and enjoy.

Ingredients

  • 16oz of Mixed Frozen Veggies (Let them Defrost)
  • ¼ Tsp Garlic Powder
  • 1 Tsp Salt
  • ½ Cup of Flour
  • 2 Large Eggs
  • 3 TBS of Cooking Oil
  • Cooking Spray

Directions

  1. In a large mixing bowl add in the Veggies, Garlic Powder, Salt, Flour, and 2 large eggs.
  2. Mix all of the ingredients up in the bowl, so it creates a veggie batter.
  3. Set a pan to medium heat and add in some of the cooking oil.
  4. Once the Pan is up to heat add in 1/3 Cup of the mix per Fritter. You can do a couple at a time depending on the size of the Pan.
  5. Cook the Fritters for 3 minutes per side. Add additional oil or cooking spray as needed!
  6. Place on a plate and enjoy with some dipping sauce or dressing like Ranch!
