Intro
BBQ Stuffed Chicken Skewers are a fun grilling recipe that I’m excited to bring to everyone. With this one, you can change so many things to make it your own recipe. Change up the Cheese you use or use any type of chicken wing sauce during the basting phase of the recipe. I seasoned the chicken with Salt and Pepper, but use what you like for BBQ Stuffed Chicken Skewers. Save this recipe and try all the combinations!
Pro tip here I used some wood skewers, but a heavier metal skewer would probably be better to make flipping the chicken a little easier. Another tip is this is cooked over indirect heat, so you can use the direct heat to cook a steak, burgers, or hot dogs! Give this one a go for your next at-home grilling event!

Ingredients
- 2 Chicken Breasts
- 6 Slices of Bacon
- 3oz of Mozzarella Cheese
- ¾ Cup of BBQ Sauce
- Salt and Pepper
Directions
- Cut each chicken breast to open them up, but not all through, and flatten them out. (Look over the photos below)
- Pat them dry with a couple of paper towels.
- Slice 2 Pieces of Mozzarella Cheese and roll one of each into the chicken breasts.
- Season with Salt & Pepper and then wrap each with 3 pieces of Bacon.
- Take 2 Skewers and poke them thru both of the rolled chicken breasts.
- Place on a heated up Grill not directly over the heat.
- Place the cover over the grill. Every 5 minutes or so baste the chicken with the BBQ Sauce and flip the Chicken.
- Periodically after about 15 minutes start to check the internal temperature of the chicken with an instant-read thermometer.
- Once the Chicken reaches the 165 degrees Fahrenheit internal temperature you can remove and plate it.
- Enjoy with a cold beer or your favorite beverage!
