Beefy Slow Cooker Chili

It only seems right to start this website with one of my favorite and probably the one recipe I’ve made the most over the years Beefy Slow Cooker Chili. My brother shared this recipe with me when I first starting cooking for myself. (Still, have the original print out!) He emailed it to me after I had been by his place and had a bowl. Now the recipe has changed over the years and has had several variations. That is the great thing about chili you can try different combinations and make it your own. This is my basic Beefy Slow Cooker Chili. I hope you enjoy it! Don’t be afraid to make it your own. I’ve never made it the same way!

Beer pairing

Now, what would chili be without a cold beer to pair it with? Now with chili I recommend an American style IPA. Why? Well, let me tell you! The Hoppiness of this type of beer will cut through the fattiness while the earthy or grassy notes will complement the seasonings of the chili. In addition to this, the saltiness of the chili will help cut down the bitterness of the hops making this a wonderful pairing.

Ingredients

  • 1.5 to 2 pounds of ground beef
  • 2 Chili Packet Seasoning (I recommend McCormick seasoning)
    • Alternative to Chili packets. 1 TBS of paprika, cayenne, oregano, cumin, onion, and garlic mixture.
  • 3 Large Green Bell Peppers
  • 4 Jalapeños peppers
  • 8oz of Hot Banana Ring peppers
  • 6 to 8 Celery Stocks
  • 3 16oz cans of Chili Beans
  • 1 28oz can of diced tomatoes
  • 1 40.5oz Can of Dark Red Kidney Beans
  • Shredded Sharp Cheddar Cheese (Optional)
  • Sour Cream (Optional)

Directions

  1. Cut up your 3 large Green Bell Peppers. Now you want to make these manly sized pieces. You don’t need to dice these up small. Leave them large like spoon size it’s quicker! As close to the same size as possible…lets them cook at the same rate. Add to the bottom of the slow cooker.
  2. Cut up the celery. Same rule as the Green Bell Pepper. Add to the bottom of the slow cooker.
  3. Slice up the Jalapeños peppers and place them in the bottom of the slow cooker.
  4. Brown the Ground Beef in a pan. Now I used an 85/15 mix, so I didn’t pour off the fat, but if you feel the need to do this you can. After you do this you should add the chili seasoning and mix it well with the beef.
  5. Open all the cans of Beans. Take the chili beans & tomatoes and pour them into the slow cooker. The Dark Red kidney beans pour into a colander and rinse them off before adding them to the slow cooker.
  6. Add the ground beef and banana peppers to the slow cooker.
  7. Mix everything in the slow cooker well.
  8. Set the slow cooker too low for 8 hours.
  9. After the 8 hours, you can put it in a bowl and enjoy! Or you can go to step 10 thru 11 and enhance your enjoyment!
  10. Fill a bowl halfway and add a small amount of sour cream.
  11. Top off the bowl and add a layer of cheddar cheese to the top.
  12. Place the bowl in a small toaster oven and set it the oven to broil for a few minutes.
  13. Watch while the cheese melts. Now I like to slightly burn the cheese, but this is up to you.
  14. Now you can remove from the toaster oven and enjoy!
