Chewy Chocolate Coconut Bars

Intro

Chewy Chocolate Coconut Bars are the best chewy bar I have ever created!  These make for a great dessert or an end-of-day treat.  Make a batch of these and watch them disappear in a couple of hours.  The thing with Chewy Chocolate Coconut Bars is you have to like Coconut because this is the highlight.  The Coconut helps hold the bars together and is awesome.  As far as the Chocolate goes you can make these with them or without.  Now I did these with a bar of dark chocolate and they were fantastic.  If you don’t like chocolate these are still really good!  Make a batch of these and share if you want to, but you don’t have to!

Ingredients

  • 1 Cup of Butter
  • 4 Cups Brown Sugar
  • 4 Eggs
  • 4 Tsp of Vanilla
  • 1 Tsp Kosher Salt
  • 2 Tsp Baking Powder
  • 2 cups of Flour
  • 3 Cups of Coconut Flack
  • 1 Cup of Chocolate Chips

Directions

  1. Preheat Oven to 350 F.
  2. In a large bowl combine the Salt, Baking Powder, Flour, Coconut Flacks, & Chocolate Chips.
  3. Mix these well and set them to the side.
  4. In a medium pot over medium heat melt and brown the Butter. Then add in the Brown sugar and mix until all of the sugar is dissolved.
  5. Break the 4 eggs and put them into the bowl along with the vanilla.
  6. Pour the Brown Sugar & Butter mixture into the large bowl and mix all of the ingredients up.
  7. Spray a 9 by 13 pan with cooking spray and then pour the large bowl into this pan.
  8. Utilize a spatula to evenly push the batter to the edges of the pan.
  9. Place the pan into the preheated oven for 20 to 25 minutes. Test if it’s done by putting a toothpick in and seeing if it comes out clean.
  10. Remove from oven and let cool for at least 1 hour.
  11. Cut into small or gigantic squares and enjoy!
