Intro
Egg & Ham Toast is the perfect quick breakfast you can do in a toaster oven in around 12 to 15 minutes. I like this one because you can change up some of the ingredients every time not to get bored with it. Don’t have Ham use bacon. Don’t have Tomatoes how about a green bell pepper? Want a little spice use a Cajun seasoning instead of pepper. What type of bread should I use? Well, any will work from Wheat bread to sourdough bread! Give this a go for your next breakfast!

Ingredients
- 2 Slices of Bread
- 2 Large Eggs
- 2 Slices of Ham (cubed)
- 4 Grape Tomatoes
- 2 Tsp of Dijon Mustard
- Pepper
- Shredded Cheddar Cheese (Optional)
Directions
- Use a small knife to cut a square in each of the slices of bread, but not all the way thru. Just enough to make a square indentation.
- Press the inner square outlined by the cut-down and then spread the Dijon Mustard on the square.
- Dice up the Grape tomatoes and the Ham into small cubes. Then add them to the Square, but try to leave the middle a little open.
- Sprinkle with a little cheese if desired then crack an egg and dump it into the middle of the bread square.
- Season the egg with pepper.
- Line a baking sheet with parchment paper and place the egg and ham toast on it.
- Cook in the oven at 350 F for 7 to 8 minutes.
- Remove sprinkle more cheese and then broil for an additional 1 to 2 minutes.
- Remove after the broil and serve with some Hot Sauce if you desire!
