Intro

Grilling Sweet Corned Beef Brisket sounds well a little crazy.  Why would you just not boil this meat and make those classic Rueben’s!? And what the hell are you doing putting a brown sugar rub on it for?!  Well, I was at home on a long weekend in May and I wanted something different and since I was on my own if I screwed this up I would only be disappointing myself.  The other plus is no one would ever hear about this craziness had it sucked!  Grilling Sweet Corned Beef Brisket was a huge success.  Now I hope this recipe gets a ton of attention and I’ll definitely make it for others in the future.

Ingredients

  • 4-5 LB Corned Beef Brisket
  • ¼ Cup of Brown sugar
  • 1/8 Cup of Mustard
  • 1 packet of seasoning from Corned Beef
  • 1/2 Tsp of Black Pepper
  • 1/2 Tsp of Salt
  • 1/4 Tsp of Smoked Paprika

Directions

  1. Begin by lighting your coals on your Weber Grill or any other kettle grill.
  2. Remove the Corned Beef from the Package. Pat the corned beef dry with towels.
  3. In a small bowl combine the Brown Sugar, Packet seasoning, Black Pepper, Salt, and Smoked Paprika.
  4. Lightly coat the corned beef with mustard. This will help the mix you just made stick to the meat.
  5. Sprinkle and rub this mixture onto the corned beef.
  6. Insert a meat thermometer into the corned beef.
  7. Take a small pan and add a little water to the pan. Then place it under the grate in the grill opposite the coals.
  8. Place the Corned Beef on the grill above this water pan. Not over the heat.  You will be using indirect heat to cook the Corned Beef.
  9. Cover the grill and let it cook until it reaches the desired temperature.
