Intro
Slow Cooker Salsa Chicken Chili is another dumb and run type recipe. Very little effort for a great quality meal that will fill you up and keep you warm. Slow cooker Salsa Chicken Chili is also a healthy recipe that will help with those January goals you set in December. I made this up on the fly from what I had in the kitchen and I’m really happy with the outcome! If you want more spicy heat double up the peppers! If you want to add a few toppings I’d recommend Cheese, Crackers, & Sour Cream. Don’t want to use Sour Cream then substitute that add with some Greek Yogurt! Both taste great as a fun topping! However Slow Cooker Salsa Chicken Chili is great on its own in a bowl with a spoon! Give it a go!

Ingredients
- 6-8 Boneless skinless chicken thighs (3 Chicken breast will also work)
- 16oz Salsa Verde
- 16oz Can Pinto Beans
- 2 16oz Cans of Cannellini Beans
- 16oz Black Beans
- 10oz Can Rotel Original
- 2 Diced Jalapenos with Seeds!
- 2 chipotle peppers in adobe sauce
- 2 cups of Chicken Stock
- Optional Toppings: Cheese, Crackers, & Sour Cream
Directions
- Spray a slow cooker with a cooking spray and add in your chicken.
- Dump in your Salsa Verde over top of the Chicken.
- Drain your beans and rinse them. Then add them to the Slow Cooker.
- Dump in the Can of Rotel!
- Dice up your Jalapeno’s with the seeds and add this to the Slow Cooker. The seeds are where the heat is!
- Dice up a couple of Chipotle Peppers add these to the slow cooker along with a couple of Tablespoons of the adobe sauce.
- Pour in the Chicken stock and set the cooker too Low for 6 hours.
- At the 6 hour mark take the Shred the Chicken. You can either remove it and shred it up and then add it back or you can shred it right in the slow cooker. Whatever you find to be easier for you.
- Let the chicken marinate in the slow cooker for another 30 to 45 minutes on low. Then reduce the slow cooker to the warm setting.
- That’s it! Bowl add toppings if you desire and enjoy!
