Intro

Spaghetti Squash Bake is a recipe I developed because I had a plethora of Spaghetti Squash and some really good Italian Sausage from Butcher Box!  I recommend Butcher Box to anyone who asks me.  The Meat is high quality and I get a box every other month.  I usually do a few additions to the box or I’ll go in on some of their member deals.  How I got the Italian Sausage was a member deal and hence this recipe.

The Spaghetti Squash I was introduced to by my Sister in law several years ago and it is great!  I started to grow them in my garden a few years back.  This year I had so many and I was finding creative ways like this recipe to use them.  I’ll also make this Salmon Recipe and put it over Spaghetti Squash sometimes.  Anyway, Spaghetti Squash Bake is a great recipe that is easy and is also good reheated later if you don’t eat it all in one sitting!

Ingredients

  • 1 Pound of Italian Sausage
  • 2 large Spaghetti Squash
  • Quart of Spaghetti Squash
  • 8oz Shredded Mozzarella Cheese
  • 15oz Diced Tomatoes
  • 16oz of Sliced Mushrooms
  • 2 TBS of Butter
  • 1 TBS of Italian Seasoning
  • Salt & Pepper to Taste

Directions

  1. Preheat the oven to 400 Degrees Fahrenheit.
  2. Cut each of the 2 Spaghetti Squash in half.  Here is a great video on how to safely cut a Spaghetti Squash.
  3. Place them on a sheet pan and lightly oil and season the Squash with Salt and Pepper.  Then flip then cut side down.
  4. Place it in the oven for 40 minutes.
  5. Cook the Italian Sausage. (I cooked the links I had in an air fryer, but whatever method you want)
  6. Once the Italian Sausage is cooked slice them into little circle pieces and set to the side.
  7. Sauté the sliced mushrooms in a pan over medium heat with the Butter.  Once cooked turn off the heat and set aside.
  8. Spray a 13 by 9 Pan with cooking spray.
  9. Take the Spaghetti Squash out of the oven and shred it up with forks.  Then place it in the bottom of the 13 by 9 Pan.
  10. Now add the Mushrooms, Sausage, tomatoes, and Sauce to the 13 by 9 Pan.
  11. Top with the cheese and sprinkle on the Italian Seasoning.
  12. Place the Pan into the Oven for 20 minutes.
  13. Remove when done, bowl, and serve!
