Intro

St. Paddy’s Reuben Casserole is a great dish to help celebrate the holiday.   In my mid-twenties when I was living in an upstairs duplex I’d throw a St. Patrick’s Day celebration.  I’d have a quarter keg of green beer and a couple of appetizers, but the main draw after the first year was this Reuben Casserole.  Now those were some fun times!  We would start at my place work our way out to some local taverns and then back home again.

I’d double this recipe and have it ready for my drinking buddies!  St. Paddy’s Reuben Casserole is a great recipe because right out of the oven it takes incredible and reheated in a microwave or in the oven it tastes the same!

I’ve continued to make it over the years to celebrate the Holiday, but I only make one tray now.  The all-weekend event has now fizzled to a one day adventure as I’ve pushed into my late 30s.  Only 6 ingredients to this one!  The longest part is cooking the corned beef.  Don’t try to use deli-sliced corned beef.  Take the time to boil a seasoned corned beef at home.  In this instance, I had a 3.2 LB corned beef brisket and it took about 2 hours and 40 minutes.  It makes all the difference and you will for sure thank me that you did!  Give it a try!

Ingredients

  • 16oz of Sauerkraut (Rinsed and Drained)
  • 2lbs of Chopped Corned Beef (Get a legit Corned Beef and follow the instructions to Boil that come with it)
  • 16oz of Sour Cream
  • 1 Clove of Garlic Minced
  • 1 to 1 & ½ Cups of Swiss Cheese
  • Half a loaf of Rye Bread Cubed (Usually this is about 6 to 8 slices)
  • 2 TBS of butter melted

Optional Topping

  • Thousand Island Dressing

Directions

  1. Cook your Corned Beef according to the boil instructions on the package. (Super Easy to do!)
  2. Chop up about 2lbs of Corned Beef
  3. Preheat Oven to 350 degrees
  4. Combined Sauerkraut, Corned Beef, Sour Cream, & Garlic into a bowl.  Mix well!
  5. Spray a 13×9 Pan with a cooking spray.
  6. Spread out the mixture into the Pan.
  7. Melt the Butter.
  8. Sprinkle about half of the Swiss cheese over the mixture.
  9. Cube the Rye Bread and sprinkle it over the Mixture.
  10. Drizzle the butter over the bread and then drop the rest of the cheese over the bread.
  11. Place in oven uncovered for 25 to 30 minutes or until heated through.
