Intro
Thanksgiving Egg Muffins is a great way to utilize those Thanksgiving Day Leftovers for your morning breakfast. You have so much Turkey left and need to find ways to eat it besides the simple turkey sandwich. This is a great way to do it and it even tastes amazing. Make these up the day after Thanksgiving and store them in the fridge for the next week’s quick breakfast or as a snack.
Thanksgiving Egg Muffins is great for on the go breakfast. Just heat them up really quickly in the toaster oven and you are out the door in a matter of minutes. I usually just use the toast setting that that is enough to heat them, but your toaster oven may be different. I make Egg Muffins all year round, but these I look forward to every year. Ingredients
- 8 to 12 Eggs (Personal preference I like to have an egg per muffin, but it’s not needed)
- 1 1/2 Cups of Turkey
- 2 Cups of Stuffing
Directions
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl put in your stuffing and then the turkey.
- In a separate bowl put in your eggs and Wisk those into an egg mix. Much like you would do for scrambled eggs.
- Add the egg mix to your Turkey and Stuffing Bowl.
- Mix this bowl up well.
- Spray your 12 cup muffin tin with cooking spray.
- Spoon equally the egg mixture into each of the 12 Cups.
- Place in the oven for around 20 minutes. Keep an eye on the egg. Once the egg is cooked it will be done.
- Remove from the pan and enjoy or store in an airtight container in the fridge for later consumption.
