Thanksgiving Enchiladas is a Thanksgiving leftover meal that is just amazing! Yeah, you can make a turkey sandwich or whatever, but why not make Thanksgiving Enchiladas!?! This is a fun recipe that takes very little effort and yields some terrific results! Let’s be honest your wife or mom did most of the work making the Thanksgiving meal here. Now you can take advantage of their work and make Thanksgiving Enchiladas!
The Day after thanksgiving you are going to have almost everything you need to make these. If you’re an avid Taco Tuesday or Burrito Fan then you should be good to go on this one! You can also pair this with a cold beer and for dessert some of that leftover pumpkin pie your mom made! Finally, you can add more or less of the ingredients listed depending on your taste.

Ingredients
- 1 cup of Shredded Turkey
- 1 cup of Stuffing
- 1 ½ Cups of Gravy
- 4 Flour Tortillas
- 8oz of Shredded Cheddar
Directions
- Preheat Oven to 350 degrees Fahrenheit.
- Place a Tortilla and put in the middle ¼ of your Turkey and Stuffing. Roll the Tortilla like a Burrito and place in a Pan that is sprayed with cooking spray. Place with the seam down.
- Repeat step two 3 times.
- Now pour the gravy over the 4 enchiladas, so that they are all covered very well.
- Sprinkle all the cheese over top of the gravy-smothered enchiladas.
- Place in the oven for around 20 minutes.
- Remove when all the cheese is melted, plate, and enjoy!
