Intro
Cheesy Ham Cornbread Casserole combines two of my favorites. Cornbread is just amazing on its own and Ham which I’ve always loved at family dinners. I’m also a fan of the Ham Salad Sandwich. Guess I need to make both of those soon! Anyway, the Cheesy Ham Cornbread Casserole combines these two into a fun dinner option. Like most Casseroles, it is a great reheated item and keeps for a few days if you don’t eat it all at once. Last minute I decided to add in the corn and that was a win. Ingredients
- 1 Cup of Cornmeal
- 1 TBS Baking Powder
- 1 Cup of Flour
- 1 ½ TBS of Sugar
- ¾ Tsp Salt
- 12oz Frozen corn, Thawed, and Drained
- 1 Cup of Milk
- 1 Cup of Sour Cream
- 6 TBS of Butter, Melted
- 16oz of cubed cooked ham
- 2 Cups of Shredded Cheddar Cheese
Directions
- Preheat the oven to 350 F.
- Spray a 9 by 13 baking dish with cooking spray.
- In a large bowl whisk the cornmeal, baking powder, flour, sugar, & salt together.
- Add in the Corn, Milk, & Sour Cream. Stir to combine.
- Melt the butter in a saucepan.
- Add the butter, ham, and half of the cheese to the large bowl. Stir to combine.
- Pour the large bowl contents into the 9 by 13 baking dish and spread evenly into the baking dish.
- Sprinkle the rest of the cheese on top.
- Place in the oven and bake for 40 to 45 minutes or until golden brown.
- Remove from oven and serve warm.
