Game Meat Marinade

Yields 2lbs of meat would be around 4 to 8 servings.

Intro

Game Meat Marinade came up because a friend gave me some back straps from his deer this past winter.  I was a hunter in my youth and would go out with my father and one of his friends.  I enjoyed hunting Geese.  My Dadd called his friend Goosey Bob our guide.  I always found that amusing.  Those early mornings as a young man I will never forget.  Those two men really gave me some direction as a young man and I enjoyed seeing my father hang out with one of his buddies.  I still don’t understand the coffee addiction the two of them had or the fact that we had to be out there at 5 am, but the first set of Geese NEVER came in until around 7 am.  It was all worth it for the life experience.

Anyway, Game Meat marinade would work for most game meats even some tough Goose Breast meat.  It’s a simple marinade and I think the liquid smoke actually gives it the best flavor.  Now I used a Hickory smoke, but depending on the meat or personal taste you may want to try another flavor.  Hit this link for a Liquid Smoke variety.  Give this one a go next time you harvest an animal or have a friend supply you with his hard work!

Ingredients

  • Up to 2lbs of Game Meat (This time I used  Deer Back straps)
  • 3 TBS Worcestershire Sauce
  • 2 TBS Soy Sauce
  • 1 Tsp Liquid Smoke
  • 2 Tsp Balsamic Glaze
  • ¼ Cup of Avocado Oil
  • ½ Tsp Salt
  • ½ Tsp Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Clove Garlic Minced

Directions

  1. In a gallon Zip Lock Bag or an air-tight container combine all the ingredients and the Meat.
  2. Place in the fridge for up to 24 hours.
  3. 45 minutes before you are ready to grill take the marinated meat out of the fridge. This will give the meat time to come to room temperature before grilling.
  4. Prepare your grill.
  5. For these Back straps which were around an inch thick, I grilled them on a charcoal grill over high heat for about 2 ½ to 3 minutes on each side. I suggest using a meat thermometer and grilling them to 120 F or your desired wellness.  I suggest a medium to medium-rare.
  6. Remove from grill slice and enjoy!
